Somewhere between an omelet and a quiche is the frittata.
The frittata is a traditional Italian/Spanish dish, although I imagine there are variations all over the globe. The eggs are whisked until fluffy, vegetables are added, and the entire mixture is cooked on the stove, omelets-style, until eggs are midway done. Next, the veggie-egg mixture is poured into a baking dish, cheese is sprinkled on top, and the frittata is baked on medium heat for about 15 minutes. As per usual, I didn’t really follow direction, and, as per usual, it still turned okay.
I found my recipe here, and I absolutely loved it. Quick, simply, delicious, and filling. I have a feeling there will be many more frittatas in my future.
