Oven Troubles: Double-Chocolate Cookies

I'm blaming this one on the oven.

I've mentioned this before, but my little oven definitely has its quirks. There's no pre-heat option. There's no way to set a temperature. There's no "bake" or "broil", but instead the rather mysterious "crisp" and "grill" (I think "grill" is hotter than "crisp", but honestly I have no idea what these buttons mean.) It's functional, but probably not the best device for hard-core baking.

So, naturally, I decided to make cookies. 

after some experimenting (and an apartment full of smoke), they
finally started resembling cookies. 

It took some experimenting the get the cook time right, but they actually turned out fairly well! I really like the recipe I used- super chocolatey and almost cake-like in consistency. Using my all-time favorite Callier chocolate probably didn't hurt, either. 

While I probably will put my baking on hold until I  have access to a more traditional oven, I have a feeling these double-chocolate cookies will be making a comeback. 

Recipe
(based off this recipe, makes a couple dozen cookies)

Ingredients
1 cup butter
1.5 cups white sugar
2 eggs
2 cups flour
2/3 cups cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon instant coffee 
2 cups chopped dark chocolate

Step 1: Beat butter, sugar, and eggs until light and fluffy. Add flour, cocoa, baking soda, and salt.  Add chopped dark chocolate.

I love cookie dough. If it weren't for the raw eggs (and general unhealthiness),
I could probably eat the entire thing. seriously. 
I looked in a few grocery stores, but couldn't find any chocolate chips...
so I made my own! delicious!
mmm...ready for the oven!

Step 2: Bake on an ungreased cookie sheet until done (in the actual recipe, its 375 F for 8 minutes...in my little oven, it was on "grill" for 3.5 minutes.) 

take 1: I baked the cookies for the recipe-recommended time (8 minutes), and
was awarded with a pan full of charred cookies and an apartment
full of smoke. not my finest cooking moment. 
take 2: delicious cookies, cooked for considerably less time. that's more
like it.
